Really Easy Honey & Orange Glazed Chicken 2007/11/27

I love recipes that are one pot wonders! So quick and easy – and great for mid week evening meals, delicious. I got this recipe from a great book edited by Linda Fraser… called ‘Best-Ever Chicken‘ .

 

Frying Time: about 5 mins
Oven Time: about 45 mins
Serves: 3-4 (a breast each)

Equipment:

  • Shallow roasting tin
  • Wooden Spoon
  • One Small Pan

Shopping List:

  • 700g (3-4) Chicken [breasts];
  • 250g (1 large) Onion [chopped];
  • 1 medium orange, peeled and segmented;
  • fresh lemon balm or flat leaf parsley to garnish;
  • Garlic (1 clove) [chopped];
  • 60ml (4 tbsp) fresh orange juice;
  • 45ml (3 tbsp) honey;
  • 30ml (2 tbsp) soy sauce;
  • 15ml (1 tbsp) olive oil;

To Make Really Easy Honey & Orange Glazed Chicken:

Preheat the oven to 190°C/375°F / gas mark 5 /’moderately hot’

Place chicken into roasting tin and set aside for a few minutes.

Heat the oil in a small pan and fry the onions and garlic for a couple of minutes, just until the onions have softened.

Add the honey, orange juice, orange segments and soy sauce to the oil in the pan.

Stir until the honey has dissolved.

Pour the sauce over the chicken in the roasting tin, and then just pop the lot into the pre-heated oven, uncovered, for approximately 45 minutes in total.

Baste every so often with the honey glaze until the chicken is cooked.

Garnish with the lemon balm or parsley and serve with a crisp green salad and baked potato. Divide up the sauce according to the number of people/ breasts or as you wish.

How easy — and how delicious! This is the sort of dish that seems very “cheffy”, it’s “proper” cooking somehow, and yet you don’t have to be a chef to get impressive results. At the end of the day, this is just a very delicious dish, and well worth a giving it a go. Make it as poncy or as rustic as you like!
