Low Fat Cheesecake 2010/07/19

Recipe for delicious low fat cheesecake that is perfect for people on a high protein, low fat and low carbohydrate slimming diet.

Prep Time: 5 mins.,
Cooling Time: 15 mins.,
Serves: 2.

Equipment:

  • Bowl;
  • Whisk or wooden spoon;
  • two small ramekin dishes;
  • Fridge.

Shopping List:

  • 30 g (2 tablespoons) of oat bran;
  • 2 ml (splash) of skimmed cow’s milk;
  • 60 ml (four tablespoons) of Meadow Churn Quark;
  • 60 ml (four tablespoons) of Total Zero percent Greek Yogurt;
  • 10ml (two teaspoons) of vanilla extract;
  • Juice and zest of one lemon or one lime to taste;
  • 35 g (2-3 tablespoons or to taste) Splenda sugar substitute.

To Make low fat cheesecake:

Moisten the oat bran with the milk, then split into two portions and press each portion into a ramekin base.

Mix the remaining ingredients in a bowl, pour onto the prep’d ramekins, equally.

Place ramekins in the fridge for 15 mins.

This is a quick and easy dessert for people on the Dukan Diet — it is good for the attack and cruise phase (i.e. from start right through until you hit your target weight), and beyond…

Yo[Picture of Meadow Churn Quark Pack]u can substitute the lemon/ lime for a teaspoon of zero-fat cocoa.  If you have no Quark, you can substitute Fromage Frais.  The recipe is best with thick quark, and the Meadow Churn quark from Tesco seems to be thicker than the Scottish quark from Morrison’s. Play around with the sweetness until you get it just right for you.  Daddy Dave likes it pretty tangy with the lemon!  This is easy enough for kids to help with. Enjoy!

OK, so I made this tonight. I’ve not eaten it yet, but I licked the spoon after having poured the cheesy bits into bowls.

GENIUS! My tastebuds were on FIRE! I only needed 1tbsp of sweetener. I’m spreading the word, your recipe is the best pud I’ve come across yet!

Can’t wait to try it tomorrow night as dessert with our beef stirfry… YUM!
