Bolognese devine 2015/01/13

I’ve had some really bad Spaghetti Bolognese in my time, I really have. So many people have this idea that it must have a tin or two of tomatoes, and loads of garlic (I’ve even had cheese and chocolate in it!) – or else they have no idea that it must have celery, milk, carrots, stock and wine! The thing to remember is this – firstly, Bolognese has no tomatoes, and secondly, that it starts, as do many Italian dishes, with a soffritto. The pork really makes a difference. This is said to be the most original and most authentically Italian, and it’s super simple (especially if you have pre-prepared the soffritto), and a very easy one-pot dish.

Prep Time: 10 mins.,
Cooking Time: about 3 hours,
Serves: 6-8 with a pasta.

Equipment:

  • Large mixing bowl;
  • Sauté Pan with lid;
  • wooden spoon;
  • two glasses;
  • jug/bowl for stock.

Shopping List:

  • Soffritto – from the freezer – or make it with onions, carrots and celery;
  • 250 g Minced Pork;
  • 250 g Minced Beef;
  • 15 ml olive oil;
  • glass of wine (any type, any colour);
  • glass of full fat cow’s milk;
  • 500 ml stock (any kind);
  • tube of tomato purée

Prep:

Get stock ready

Add olive oil to the sauté pan and heat

Add the soffritto or soffritto ingredients

Meanwhile, put the pork mince and the beef mince in the mixing bowl, drizzle over some olive oil and mix well with the hands

Add to the soffritto and keep the heat high, mixing, moving to mix with the soffritto and to brown the mince, using the wooden spoon.

When browned, add the glass of wine and stir in, let the alcohol cook off a bit and the pan to come back to temperature

Add the glass of milk, stir in well to soften and break down the meat, after a few minutes, when the temperature has been regained

add the stock and stir in to mix well

Finally add the tomato purée and stir in well

Put on the lid and turn the heat way down to a small simmer for 1.5 hours

Visit occasionally to stir and check liquid levels – if low add more stock.

After 1.5 hours, remove the lid and keep the simmer for another 1.5 hours.

Voila! Perfect and authentic Bolognese – make some Tagliatelli on the side, add to the bolognese wiht come pasta water, season to taste.

Soffritto is simply three finely chopped vegetables used as a foundation for Italian dishes. This takes time and tends to put people off cooking from scratch – the effort to do this can be stretched out, saving you having to repeat each time – the idea here is to do it one time, and freeze in space-saving batches for future needs.

Prep Time: 10 mins.,
Cooking Time: 10 mins.,

Equipment:

  • chopping board;
  • small sharp knife;
  • sauté pan;
  • cooker;
  • Freezer bags;
  • Freezer.

Shopping List:

  • Onion;
  • Celery;
  • Carrots;
  • Olive oil.

Prep:

Finely chop the onion, celery and carrots on the chopping board until you have the same quantities of each.

To Make the Soffritto:

In a sauté pan, coat the base with olive oil, and heat. Then add equal amounts of the finely chopped onion, celery and carrots (enough) to thinly cover the bottom of the sauté pan. Add some salt to help remove the water. In a few minutes you will have a soffritto base for Bolognese and many other Italian dishes.

Note down the amounts of each for your pan, and either make small pags of onions, small bags of celery and small bags of carrots – or made several small bags of “raw” soffritto.

Get the air out of the bags (ziplocs are good for this), and make sure they are a laid flat on a single layer – label and freeze as a stack of thin bags.

Thin flat bags are quicker to thaw and use for cooking at any time you need a soffritto, and no waste – and no more fine chopping and tears!

Daddy Dave’s usual thing is to make  meatballs the lazy way Nigella Lawson does it — using Italian sausage meat, but as Italian sausage can be difficult to obtain (we get ours from Dobbie’s), he wanted to try to get as close to his childhood memories of his friends’ nonnas’ meatballs.

This is what he has wound up with. It is a fool-proof, big single pot recipe, a man’s dish. It is simple, yet lipsmackingly good. Enjoy.

Prep Time: 30 mins. (can be prepp’d in 15mins),

Limoncello devine 2012/09/16

I have been making bottles of Limoncello as Christmas gifts!

Prep Time: 5 mins.,
Cooking Time: 10 mins.,
Serves: 2.

Equipment:

  • vegetable peeler;
  • small sharp knife;
  • bowl or jug;
  • bottles;
  • Cling film

Shopping List:

  • ten unwaxed lemons;
  • 75ml bottle of vodka;
  • 3 1/2 cups Water;
  • 2 1/2 cups Sugar.

 

To Make the Limoncello:
The peel is all we need for this recipe, so using the vegetable peeler, get long strips of peel from the lemons. Trim & discard the white pith from the peel using the knife.

Put the de-pithed peel strips into the jug and pour in the vodka before covering with cling film.  Leave alone for four days at room temperature.

Four Days later

Remove cling film and stir, pour into a large saucepan and heat on stove (medium heat) until sugar dissolves (about 5 mins) then let it all cool down to room temperature again.

This week has been mad rushing about!

We have received our state-of-the-art CCTV system, got it all installed and working brilliantly. I’ve been at hospitals and schools, then doing the VAT and all sorts.  Daddy Dave has seen his accountant.  The Family calendar has been ordered after a really hard selection process (we have such a lot of great photos this year). Every Mother’s Praised Chicken 2011/12/12

I saw Nigella Lawson on the TV do this, and thought it looked easy enough to try. My first Nigella recipe! It was an instant hit and I’ve now made it several times. Our twist is to calm down on the peppercorns and serve it as a soup with good bread! Nigella called it “My Mother’s Praised Chicken”, but – let’s be frank, this is (or ought to be) every mother’s chicken dish; it will restore from death’s door every member of the family. Guaranteed.

It’s super easy for busy mothers everywhere…

Prep Time: 5 mins.,
Cooking Time: 2 hours,
Serves: 4-8.

Equipment:

  • A BIG pot with a lid, (Nigella’s is Ø28cm x 10cm deep);
  • Teaspoon;
  • Kitchen knife;
  • kitchen scissors.

Shopping List:

  • one large chicken;
  • 2 litres cold tap water;
  • 100 ml white wine or vermouth;
  • 2-3 leeks;
  • 2-3 carrots;
  • 1-2 celery sticks;
  • 2 teaspoons garlic infused oil;
  • 2 teaspoons sea salt;
  • 2 teaspoons red peppercorns
  • 1 bouquet garni or 1 teaspoon dried herbs;
  • 1 small bunch of fresh parsley;
  • some English mustard & some fresh dill.

Prep:

Leeks – clean, trim and cut into 7cm lengths
Carrots – peel, cut into batons
Celery – slice
Dill – chop

Untruss the chicken, breast-down push down until breast bone cracks, press further to flatten slightly.
Cut off the chicken’s feet with scissors below drumstick.

To Make the Praised Chicken:

Add the garlic oil to the big pot and heat

Add the chicken breast-down turn up heat to high to brown

flip over the chicken, add the cut-off feet

Pour in the wine, let it bubble a bit

Add the leeks, carrots and celery

Top up with water to cover the chicken

toss in the herbs/ nouquet garni and parsley

Bring to the bubble boil then slam on the lid

trun down very low to simmer for 1.5 – 2 hours

(Nigella does 1.5 hours and turns off the heat leaving it alone for 30 mins

Nigella recommends rice, but we have it as is. We have added bacon and other things from time to time, and you can’t go wrong really. Just check the seasoning before serving.

There is very little washing-up, very little activity as a cook, and very easy and quick prep. It can be left alone for the whole time to let you do other things. I’ve included it here as this site is a sort-of personal recipe book. I’m not trying to steal any of Nigella’s thunder. This dish encouraged me to to try further Nigella recipes – equally simple and also very delicious!

The weather has taken a turn for the worse.

And I got ill. Probably the ‘flu. It hit me last Tuesday, but I struggled on (as y’do).  Daddy Dave had to take over in the evenings, but I couldn’t shake it for ages.  Oli fell on the stairs and hurt her chin, poor soul.

The winds got up — and the weather people declared it a Red Alert Weather Warning Status Thingy — so, all things considered, Daddy Dave stayed home with us. (more…)

Santa’s Book of Good & Bad 2011/11/08

I was going through the mess left by a number of children in my living room, when I saw a little hand-made book that made me laugh.

[Scanned picture of Santa's Book of Good and Bad by Oli]It is addressed to Santa, is seems to be from ME about both my children’s behaviour. However, the handwriting, according to mummy forensics, is that of my daughter.

The cover simply says: “Santa’s Book of Good and Bad”.  I wondered about that, However, it seems that Daddy Dave told her that her guardian angel takes notes on her behaviour all day, putting the good things on one side, and the bad things on the other.  At the end of each day, the angel looks at the lengths of the two lists and tears out the shorter list to leave only good or bad for the day.  At Christmas, Santa looks at The Book of Good and Bad, to see if it’s more good lists or bad lists in order to decide about Christmas gifts.

I like how she handled the mix up in “Love Ruth”, where she swapped the last letters to be “Lovh Rute”, spotted the error, and used arrows to clear things up.

Yeah, that would fool Santa no problem.

So it appears that Oli’s bad page/list has been removed along with DP’s short list of good deeds to reveal her as the more deserving of a fabulous Christmas.

Quite why I am implicated, is a mystery, but I was just amazed at her bare-faced cheek!

Sunday was a Red Letter Day for us.  It was the day that DP learned to ride his bicycle without stabilisers. Yes! now all the family can ride bikes.

What we did was remove his pedals along with the stabilisers.  This gave him a “balance bike”. To be frank, purpose built balance bikes are a con when you think about it. (more…)

Colin NorrisOnce again, loads of people have been getting in touch.  This time it is because the BBC ran a program about convicted serial killer Colin Norris.

They showed some old footage of “The Boyfriend” that had my sister, J, and Colin Norris on stage.  We went to school with Colin.  When I heard that he was convicted of being a serial killer, I was very surprised. (more…)

[Picture of Smurfs Movie 2011 poster]Papa and Charlie took Oli and DP to the cinema to see The Smurfs.  They loved it!

Oli seemed more switched on about the plot and the characters in so far as she talked about it — she reviewed the movie to me when I got home from the office.  DP was in agreement, but I noticed that he did not have the capacity for critique. Hmmn. That boy needs work!

From all accounts, it seemed to be a smashing film, and I am quite sad I missed it.

We had a really good day out at Blair Drummond Safari Park near Stirling.  Time flew by!  We met Papa and Charlie there just after 10:00, and we headed home about 17:00, so it really was a full day — and it was a day full of adventure from start to finish.

Oh, where to start? We fed the animals in the petting zoo, we watched the tiger take a nap, laughed at the meerkats and marmosets, admired the zebras — and watched the HUGE bears.  We caught the sea lion show, which was fabulous! Then we got the boat to Gorilla Island. (more…)

Yay! My big sister is visiting Scotland with her wee twin boys.  She gets to be an auntie to my children and I get to be an auntie to hers. It can be very confusing as we’re not really used to being aunts.

It is also weird that we have different school holidays in which to have our vacations; they’ll still be here on vacation when we’re all back at school and nursery. (more…)

Papa and Charlie have reported that India is really making progress (they keep on about us going out there with them sometime).  It was just magic to see them again.

My mother is back from helping out with the twins in England. J is recovering well now.  We’re all so thankful for that.

Charlie took care of Oli and DP to let us grab a wee break, a much needed break, and off we went.  (more…)

My CSCS card came though at last — I sat the Construction Skills Certification Scheme health and safety test for UK construction sites when my old one ran out after five years, so that’s me sorted out for another five — and THIS time my photo actually looks like me (gorgeous) LOL.

I need this so I can attend meetings on construction sites, and so that I can take sizes and check workmanship (as well as safe working practices).

Scary Glasgow 2011/07/12

Glasgow’s everything you’d expect — filled with drunks, druggies, neds, and general low life.

We live in a rough area, the local restaurants, clubs and pubs bring all sorts into the area for most of the week (weekends seem to go from Thursday to Sunday, leaving just three days for peace).

Since I’ve been here, I’ve been mugged by a drug addict, drunken men have fallen onto Olivia’s pram on a Saturday afternoon, an entire park was cordoned off for months for a high profile murder.  A girl was raped in our back lane, our cars have been vandalised, we are surrounded by graffiti, dog dirt, litter, drug addicts’ needles, and there are broken Buckfast bottles everywhere. We’ve had threats, skips have been set on fire, and we have rats round the back! I could go on and on, but I’m sure you get the picture.

So why do we live here? Well, for a start, it basically costs us next to nothing as Daddy Dave bought the place back in the mid 1980s for a song. He mainly used it as a storage facility and bolt hole when he was in town.  It’s more trouble to sell than to hang onto to be honest, especially in this depressed market — it has been down for four years and is predicted to remain low for at least two more years.  It’s not worth doing up either.

We didn’t think that Daddy Dave would be working continuously for years in the Glasgow area, and our plan has always been to move on, probably abroad again, once the big projects are complete.

Glasgow is one tough town, and you just have to keep yourself to yourself just to get by.  We’re lucky to have as many good neighbours as bad ones, so we feel a real part of the community, and that helps, but it is still aware that there is all too often a police car in the streets, a police helicopter above us, and ambulances and all sorts just two streets away.

My Dad might be able to use the place for his church, perhaps to help young people with alcohol or drug dependencies get back to something resembling real life in a real community.  Of course we would not charge rent or anything, so we would not require a multiple occupancy licence, but at least the place would not be lying empty
